Little known to the mainstream media are the real "superfoods", not fruits and vegetables, which are too low of a concentration of nutrients and needs to be juiced in order to concentrate the nutrients, but many animal based-foods such as raw milk, raw cheese, eggs, yogurt, and chicken broth.
Animal fat sourced from organic, pasture-raised animals contains the highest levels of nutrients and often minerals, too. Chicken broth from these pasture-raised chickens is full of minerals such as calcium, potassium, magnesium, and phosphorus and vitamin D. Long valued as an old-time remedy, the cold-relieving affects of chicken broth cooked in soup may have been confirmed. Of course, if you've read the GAPS book you already know that chicken broth helps to heal the intestinal wall by supplying all the necessary minerals it requires to heal again. Often the intestinal wall is damaged by leakage and inflammation.
And that mineral supply could explain chicken soup's ability to fight blood pressure. The magnesium in chicken broth helps prevent heart disease, which is caused by trans fat, not saturated fat. Magnesium has the ability to lower heart disease as the study shows. Really simply drinking at least a cup of chicken broth a day can help supply minerals and nutrients while beating off the sugar cravings. And its easy to cook with! Below is a favorite recipe of mine (and believe me I never fix anything complicated):
- 2 cups of chicken broth
- 1 cup of soaked lentils
- Half a cup of chopped carrots
- Half a cup of spinach
- 1 cup of broccoli
- 1 teaspoon of parsley
- 1 teaspoon of savory
- 1 teaspoon of chives
- A lot of butter
